Fort George Contemporary IPA Recipe

Jack Harris of Fort George Brewery (Astoria, Oregon) supplied this recipe for his or her wet-hops India pale ale. “Contemporary IPA is like beer in 3D—with out these foolish glasses. Anticipate hints of citrus, resin, and fruit to flood ahead, adopted by a piney, earthy complexity.”

ALL-GRAIN

OG: 1.067
FG: 1.zero15
IBUs: 90
ABV: 6.5%

MALT/GRAIN BILL

12 lb (5.four kg) natural pale malt (2-row)
1 lb (454 g) flaked maize
eight oz (227 g) Crystal 15 malt

HOPS SCHEDULE

zero.5 oz (14 g) Simcoe pellets [13% AA] at 90 minutes
2 oz (57 g) Simcoe pellets [13% AA] at 30 minutes
1 lb (454 g) recent Simcoe moist hops at -knockout
2 oz (57 g) Simcoe pellets dry hop 7 days

DIRECTIONS

Mash the grains for 60 minutes at 154°F (68°C). Boil for 90 minutes, following the hops schedule. Whirlpool and chill, then ferment at 66°F (19°C), dry hop as indicated, and bottle or keg.
